Origins
The largest producers of cocoa beans are found in Africa. Unsurprisingly, most of the world's cocoa suppliers are based in areas with warm and humid climates. That's just what suits the true cocoa tree (Theobroma cacao).
More than 30% of the global cocoa market comes from Ivory Coast. It is responsible for 2/3 of all revenue flowing into the country. Yet farmers there live in very poor conditions and many have never tasted real chocolate. Other countries that are major suppliers of cocoa include Ghana, Nigeria, Cameroon, Brazil, Ecuador, Mexico, Peru and the Dominican Republic.
It's also good to know that 90% of cocoa trees are grown on small family farms, with only 5% of cocoa coming from large plantations.
Cacao trees can ba roughly compared to our cherry trees. They are native to tropical regions of America and, according to archaeologists, people have known and used their seeds since 1400-1110 BC. In nature, these evergreen trees reach a height of 5-8m. On plantations they are kept lower. They flower almost all year round. The fruit is an elongated berry about 30cm long with a slightly bumpy and longitudinally grooved surface. They may be yellow, orange or red. There are about 40 cocoa beans inside each fruit.
Harvesting the fruit is very physically demanding. They must be removed carefully from the trees, so that the spot may produce new flowers. After chopping with a machete, workers remove the seeds and in some cases process the sweet pulp into a drink. They leave the seeds to ferment for a few days, then dry them, usually in direct sunlight.
But the road to the dark brown powder's intoxicating aroma is still quite a long way off. The dry cocoa beans need to be roasted and crushed. Then the skins and the sprouts that remain are removed. The pulp goes to the cocoa mills where it is made into cocoa mass. This is then pressed into cocoa butter. The pulp that remains is ground into a very fine cocoa powder, which also contains some cocoa butter. According to regulations, it must be more than 20%.
The so-called Dutch cocoa is further alkalized. This means that its taste and color are enhanced by acidity regulators, which makes the cocoa smoother and less acidic. Extra Brut Cocoa Powder has been produced in exactly this way.
Cocoa consumption has been shown to induce positive feelings and good mood. It contains antioxidants and minerals such as magnesium, potassium and iron.
