Plein Arome Cocoa is made using alkalization to avoid excess acidity. The flavor is intense, smooth and of course pleasantly bitter.
Origins
As we write in the introduction, this cocoa is a blend of the finest cocoa powders in the world. It is so-called Dutch-style cocoa, i.e. processed in the final stage by adding acidity regulators. This makes it truly smooth and delicate.
Cocoa beans are nothing more than the seeds of the evergreen cacao tree (Theobroma cacao). They are native to the rainforests around the equator, where the climate is hot and humid. From Central and South America, these trees, reminiscent of our cherry trees, have been transported to almost the entire zone between the tropics of Cancer and Capricorn.
Cocoa trees flower year-round, but a greater production happens twice a year. One tree can produce up to 6,000 flowers per year. But only about 1 in 100 is fertilized and turns into a cocoa pod. Remarkably, the cocoa trees are pollinated by the rhizome, which does not occur naturally on single species plantations. This is why the pollination rate is so low.
The fruit or pod grows to 20-30cm and weighs 300-500g. It has a hard skin, under which is a white sweet flesh surrounding the seeds. They look like beans, usually 20-40 of them can be found in one pod.
Farmers must first chop the whole fruit with a machete to remove the seeds. They remove the pulp and leave them to ferment naturally for 2-8 days. Next, they dry them, clean them and sell them to buyers. Cocoa beans are traded on two world exchanges: in London and New York.
Cocoa farmers first roast and grind the beans. This loosens the husks and the stems that remain. Then comes the grinding. The resulting cocoa mass is separated into cocoa butter and cocoa powder. According to the regulations, however, even the poweder must contain more than 20% of butter.
In the case of Plein Arome Cocoa, the powder has been further alkalized. The addition of acidity regulators has given it a milder taste without the unpopular acidity. It contains 20-22% cocoa butter.

Due to the fact that it contains significant amounts of antioxidants, minerals (magnesium, zinc, calcium, iron) and vitamins (E, A), it improves the physical and mental condition of consumers. According to scientists, the euphoric experience that occurs after consuming cocoa is even 4 times longer than that after a long kiss with a loved one. Consumption of cocoa helps the cardiovascular system to function properly and promotes libido.
