Origins

Java is said to be best visited between February and November. It rains less and there are tourists. One of the world's most populous islands offers natural beauty of all kinds. There are still active volcanoes, mysterious jungles, sulphur lakes, stunning beaches and national parks. Many temples, bird markets and botanical gardens are also visited.

But one of Indonesia's islands is not only famous as a popular destination for travellers. Java is also world-famous for producing excellent cocoa. It is one of the country's most important exports and has seen massive growth over the past 25 years. Experts say this is due to the increasing number of small farmers who are beginning to grow cocoa trees. Currently, Indonesia has about 1.5 million hectares of cocoa plantations. In 2015/2016, Indonesian cocoa bean processors produced 350,000 tonnes of cocoa.

Growing and especially harvesting cocoa trees (Theobroma cocoa) is a physically demanding job. The production of cocoa, and subsequently chocolate, is equally hard.

Cocoa trees are evergreen trees native to South America. Today, they are cultivated in the equatorial regions of almost the entire world. The trees are harvested several times a year. They produce large, yellow, oval-shaped fruits, which usually contain five chambers of approximately 2cm long seeds under a tough skin. Cocoa beans were so rare in South America in Aztec times that they were used as currency.

Before the cocoa beans are turned into cocoa powder, farmers leave them to ferment for a few days before drying and roasting them. Only then can the crop go to a processing plant where the beans are ground and pressed. This produces cocoa butter and cocoa powder. These two ingredients are essential for chocolate production. Vanilla, milk powder, sugar and other ingredients are added. The mass has to be stirred, kneaded, conched, tempered... until a delicate milk chocolate is created.

Java Milk Chocolate Chips are suitable for vegetarians. They contain 34% cocoa solids.

People with allergies to milk, cocoa and vanillin should be careful with this product. This product may contain traces of nutshells and milk.

Instant Coffee 100% Organic Freeze-dried Arabica – Peru

The highest altitude lake, the largest city without a road, the deepest canyon... And one of the best instant coffees. This is Peru, a country of many contrasts, with more than a century of experience growing coffee trees. The traditional coffee region of Puno Norte produces beans with a full, chocolatey, fruity flavor. The coffee in freeze-dried form is equally superb. It doesn't lose any of its qualities, and you just have to cover it with hot water. Bonus? Organic quality! More in product details
