Colombia Maragogype Finca El Boton – Roasted Coffee
Mountains, greenery, rivers, traditions – unusually large coffee beans from the northern region of Colombia have been granted the best offerings of the Antioquia region. As a result, they yield a coffee sweet like chocolate with traces of peach and subtle acidity. Although larger coffee beans are harvested less frequently, the Maragogype variety is undeniably worth a try. That is especially true for coffee from the El Botón farm, run by the Herrán family.

Colombia Maragogype Finca El Botón is one of the sweeter coffees. Its acidity is only subtle, especially in the notes of dried fruits and juicy peaches. These are beautifully complemented by the taste of chocolate, which makes the coffee harmonious and complex. Its liveliness stands out when prepared, for example, on a filter, in a French press, or a lever coffee machine.
Depending on the preparation method, different levels of crema are produced on the surface. But it is always smooth, light, and cohesive.
Origins
The coffee you are reading about comes from the northwestern part of Colombia, the South American country with the second-highest biodiversity in the world. It is no wonder that coffee plantations there produce coffee of exceptional flavor and aroma. But one thing at a time.
The Antioquia region is one of the country's largest coffee-growing areas. It is defined by the Cordillera Occidental and Cordillera Central mountain ranges, which create a unique, humid microclimate. The abundant moisture is due to several rivers flowing down the mountainsides into the valley. The ubiquitous greenery hides the coffee plantations perfectly, one of the most famous being run by the third generation of the Herrán family. That is the one we are interested in.
Hacienda El Botón farms around 200 hectares of land and has been growing Maragogype coffee trees since its inception in 1931. It is a variety of arabica, which probably originated as a spontaneous mutation of the Typica variety in the Maragogipe region of Brazil. The so-called ''elephant bean'' coffee is distinguished by its gigantic beans and relatively low yield. However, it is a rarity in the world of coffee lovers, and when harvested from a traditional farm, it is also a sought-after delicacy.
The Herrán family farm takes advantage of the excellent soil and temperature conditions of the Antioquia region and the shade of the mature trees in which the coffee plants grow. Ripe coffee cherries are only hand-picked by the family (from September to January) to avoid plucking unripe or semi-ripe fruit. They process the coffee by washing it, meaning using water that ferments for several hours. That brings out a fruity, fresh, and sweet line in its aroma and flavor. The coffee beans are then dried in ovens to achieve a homogeneous moisture content.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
