Coffee from the Dominican Republic is considered to be of exceptional quality. The 100% arabica is characterized by a pleasant sweetness, balance and complexity. The taste is rich yet harmonious, with citrus fruits, especially oranges and grapefruit. Origins
It's not just beaches you'll find in the Dominican Republic. A true traveller will also notice its high mountains. The highest one, Pico Duarte, is at the altitude of 3,087m. The Cibao region mountains, where Dominicana AA Juncalito coffee grows, is the main agricultural area of the country. It lies in the northern part and forms a natural border with Haiti. The word 'Cibao' means 'place where rocks are not scarce'. In addition to its beautiful mountain landscape, it abounds with many waterfalls and rivers, as well as monuments.
Coffee trees were introduced to the Dominican Republic in 1715 by traders from Martinique. Given the altitude at which coffee trees grow today, we can speak of purely organic agriculture. The difficult terrain makes it impossible to use industrial fertilizers or sprays, and any movement between the coffee bushes is difficult. Harvesting takes place continuously, as the red fruits containing the two coffee beans ripen.
Farmers use what is known as washing to process them. They pour the berries into water and push them through special crushing plates to remove the pulp. The fermentation process then takes place in fermentation vats. The dehulled coffee beans are dried in the sun and in drying ovens. Finally, they are sorted and packaged.
Distributors of high-quality coffee roast it in small volumes just before they ship it to customers. This ensures its freshness.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
