Colombia Supremo Medelin Andeano is a light roast coffee with a delicate yet rich flavor. Thanks to the light roasting the notes of chocolate and juicy fruit are even more pronounced. In general, light roast coffees are slightly more fresh. In the case of the Colombia Supremo Medelin Andeano light roast coffee, it helps enhance the natural flavors.
Origins
Colombia is one of the world's largest producers of small-scale coffee. Over half a million small farmers tend to vast plantations from the Andes to the Cordilleras. They grow coffee in the lowlands, at the foot of the hills, and even high up in the mountains. That's why Colombian coffee can have very different flavor nuances. However, it is always mostly arabica with a strong aroma.
Medelin is an agglomeration in the Aburrá valley in the central region of the Andes. There, a small family-run business – Villa Maria – specializes in the production of coffee of exceptional quality. The yields of the small plantation are not staggering, but the quality is undeniable and well-known among all the world's roasters. The fruit of the coffee tree (Coffea arabica) are harvested in the second half of the year, from September to December. After being hand-picked, they are processed using the so-called wet method, where they're poured into water (the poor quality ones are taken from the surface, the rest sink to the bottom), pressed through crushing plates (to remove the pulp and skins) and fermented. At the Villa Maria farm, the coffee is fermented overnight. Then, they dry it on terraces and in dryers. The farm is recognized for its individual approach to each harvest but also for the environmental protection to which it is committed.
It is located in an area of extraordinary biodiversity, so the farmers have purchased the surrounding land, which they do not farm, in order to preserve the untouched nature for the future.

Instructions for preparation
Coarsely grind your coffee.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
