Dark chocolate chips from Peru have a perfectly balanced taste of pure cocoa beans. You will find both the typical chocolate bitterness, light sweetness and a slight spiciness. These chocolate chips are completely vanilla and soy-free.
Origin
If we wanted to give an honest account of the history of chocolate, we would have to start with the cocoa bean. And that begins around 3,000 years ago. The magic of cocoa was discovered by the indigenous tribes that inhabited the Amazon rainforest. The Incas living in Peru deliberately cultivated the cacao tree (Theobroma cacao) and used the fruit to make an invigorating, medicinal drink, often used for ritual purposes.
Cacao trees grow up to 8m. They're evergreen with dark, 30cm long leaves. After flowering, fruits appear on the branches – oval berries with a wrinkled surface. They are often yellow, but red or brown berries are also common. Inside the berries are 2cm long seeds in soft flesh. These need to be removed from the fruit, which is not an easy task, and processed by letting them ferment.
The whole process looks something like this: Workers pile the seeds into piles or wooden crates and leave them like that for a few days. During this time, the desired fermentation processes take place, resulting in the signature flavor and aroma. They can then be spread out on concrete terraces and left to dry in the sun, turning them occasionally. When everything is in order, and the beans have the ideal properties, they bag them and send them off for processing.
Only in the factories are the beans made into cocoa mass, cocoa powder and cocoa butter. Mixing them and using a complex technological process creates the base of chocolate. As in all other cases, the same applies here – too much of a good thing is bad. Chocolate has many health benefits, but don't overindulge.
Its caloric value is higher than we need. At the same time, chocolate contains significant amounts of antioxidants, iron, magnesium, copper and manganese, zinc, phosphorus, selenium and potassium. We cannot forget the stimulant – theobromine. We recommend choosing high-quality chocolate with verified origins and in its purest form, so you and your loved ones can enjoy all the benefits of high-quality chocolate.
