Salvador SHG Caracoli PB belongs to the group of beans with medium acidity. It is balanced, smooth, and sweet. The taste is fruity, caramel, and honey. Its velvety aftertaste lingers in the mouth for a pleasantly long time. Because it is an arabica, expect a smooth crema.
Origins
The case of the Salvador SHG Caracoli PB coffee is somewhat special. Its quality is, of course, among the best that the soil and farmers of El Salvador produce, but its appearance is unique. The so-called peaberry coffee is in average only 5% of the harvest and has round, pearly beans. How did this happen? Even scientists are not entirely sure what causes the mutation in the development of the coffee seed. The fruit of the coffee plant, resembling a red cherry, usually contains two beans. However, sometimes only one bean develops. It is round, relatively hard, and wonderfully aromatic. The pearl beans are separated by farmers because they require a different method of roasting.
The abbreviation SHG, for Strictly High Growing, is also worth explaining. It denotes a harvest from high mountain conditions. It is characterized by a fruity flavor. The coffee beans are harvested by farmers in El Salvador from December to mid-April. The fruit is most often processed by washing, that is, by pouring it into tanks of water, mechanically removing the skins, allowing it to ferment (which dissolves the pulp encasing the beans), and then drying it in tumble dryers or the sun.
Sailors sailing around El Salvador in the mid-19th century identified it by its often active volcano. Izalco, the so-called "Lighthouse of the Pacific", became a crucial landmark due to its constant eruptions. El Salvador (República de Salvador) has been a sovereign state since 1841, but only after the civil war that ended in 1992 did it function as a constitutional republic. In addition to economic instability, the Central American country has also had to contend with devastating earthquakes and volcanic eruptions. El Salvador has over 300 rivers and many lakes and is crossed by two mountain ranges. The vast majority of the territory lies in the inland highlands. Not surprisingly, coffee plantations are planted by local farmers at higher altitudes. They have done so traditionally since the mid-19th century. The coffee plants, mostly of the Bourbon variety, thrive well in high-altitude conditions, and their beans are of excellent quality.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
