This is an original coffee with a really strong aroma, full body and pleasantly medium acidity. But Mexico Altura is also profiled by traces of nuts and caramel, which give it a slightly sweet character. The crema is beautifully dense and compact.
Origins
Coffee production is mainly concentrated in the South of the country, with the best quality Arabica growing in the coastal areas of Soconusco and Chiapas near the border with Guatemala. Chiapas is a home not only to ancient Mayan monuments, but also to the excellent organic Mexico Altura coffee. It's a very diverse land with bodies of water, jungles and rare species of flora and fauna. In summer, the climate is very hot and humid, especially due to the heavy rains in July and August.
Coffee in Chiapas is grown by many farmers as a family business.
The high altitude and inaccessible terrain, however, often make working on the plantations difficult. Some farmers make an hour-long journey each day to reach the coffee plants. That's also why they don't treat them chemically or fertilize them. Harvesting is done entirely by hand, several times a season. Ripe cherries are collected by farmers in large sacks and carried on their backs along the dirt roads.
Mexico Altura coffee beans are processed using the wet process: the coffee cherries are placed into tanks of water (those that remain afloat are separated– they are of poor quality or unripe), then pushed through special grate that remove the pulp. The next step is fermenting the beans, drying, sorting and packaging.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
