This 100% Ethiopian arabica will not disappoint any coffee lover. The excellent Djimmah has a deep flavor, a touch of wine and a fruity note. It lingers on the palate for a long time, the fruit fades pleasantly into pleasant sweetness. The crema is elastic and thick.
Origins
The excellent Ethiopian coffee from the Kaffa region, which produces 60,000t of coffee annually, is one of the biggest of the market.
Ethiopia Djimmah can also be found under the name Jimma Coffee. The name of the region, located on the South-western side of Ethiopia, comes from the Arabic "qahwah" – meaning "drink made from berries" and clearly demonstrates the long history of coffee drinking. The rainforests that once dominated the area have been turned into farmland. In the last 30 years, 60% of the jungles have been lost. As a result, Kaffa has recently come under strict protection (it was declared a biosphere reserve in 2010) and only 30 cooperatives currently operate farms there.
The fruit of the coffee plants (Coffea arabica) is harvested several times a year to ensure it is always ripe and of the highest quality.
They are processed using the washed method, where they are placed into tanks of water and pushed through crushing plates. These reduce the size of the cherries and strip them of their flesh and some of the skin. The next step, fermentation, uses enzymes and bacteria to rid the cherries of the last bits of the skins and sticky mucilage. Finally, the coffee is spread out on concrete terraces and dried.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
