Origin
Ethiopia Sidamo comes from one of the oldest coffee plantations in the world. The mountainous forests of southwestern Ethiopia harbor small traditional farms dedicated to growing the finest arabica. Forest Coffee is 1 of 80 varieties of arabica. Each farmer chooses the most suitable one according to the natural conditions and other specifics of the plantation. Growers in the Sidamo region (in the southern part of the country) prefer Forest Coffee. Their single-origin plantation coffee is popular with true coffee veterans.
The fruit of the coffee tree (Coffea arabica) can be compared to a cherry. They are similar in color and size, however, unlike the familiar fruit, what interests us about coffee berries is not the flesh but the kernel, or more precisely, the 2 beans hidden under the tough skin and husk. In Ethiopia, they are usually disposed of by wet method. The fruit of the coffee tree is thrown into large tanks of water. Those that remain on the surface are removed, since they're of poor quality, while the berries that sink to the bottom, along with the water, are sieved through crushing plates to remove the pulp. The coffee is then fermented, stripped of the last skins and mucilage and dried. First, in the sun, then in drying ovens.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
