When describing the taste of this delicacy, we can't go without using words like pure, beautiful, or floral. Ethiopia Yirgacheffe is a delight, even though its acidity and intensity levels are almost at their maximum. On the palate, we can detect sweet traces of intoxicating tulips and gerberas, and sometimes we can also identify notes of peaches, apricots and honey. The flavor experience is enhanced by the beauty of the large and shiny beans and the nice and compact crema.
Origins
The Ethiopian region of Yirgacheffe has made coffee history with its pioneering the so-called washed method. It was here that a unique washing station was built and it marked a complete transformation in the quality of Ethiopian coffee. Unlike other parts of the country where coffee is grown on a massive scale, Yirgacheffe prides itself on smaller-scale production of traditional indigenous coffee types. The coffee from the southwest Ethiopia has an intensely floral, sweet aroma and excellent quality.
The unique wet processing of the coffee cherries involves several steps. Immediately after harvesting, it starts with washing the cherries in water, which both separates the poor-quality fruit from the high-quality one (the poor-quality cherries remain on the surface of the water) and – by pressing the cherries through special plates – it removes the pulp. The fruit can remain in the water for up to 18 hours. The next step is fermentation. It strips the wet beans of their mucilage and brings out the coffee's flavor and aromatic qualities. Finally, the coffe is dried and packaged into jute bags.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
