Origins
Coffee in Guatemala is usually grown at higher altitudes, often on volcanic soil. That gives it unique flavor characteristics. La Antiqua is an area in the central highlands of Guatemala, now a UNESCO World Heritage Site. It is surrounded by 3 volcanoes whose mineral-rich ash benefits crops as a natural fertilizer and retains moisture in the soil.
Coffee production began to develop in Guatemala after 1850. Coffee plants (Coffea arabica) grown at higher altitudes must be protected from cold northern winds. Most of the plantations belong to smaller farmers who are organized by the National Coffee Association, Anacafé. As a result, there is control over the quality of the coffee produced in Guatemala and an supervision over the farmers' working conditions.
In the Antiqua region, the cherry-like fruit of the coffee trees is harvested from January to mid-March almost continuously. Pickers go to the plantations every day to harvest the just-ripe berries. Wet processing means that the berries are put into tanks with water, where they are separated from the poor-quality ones which sink to the bottom. Together with the water, they go through crushing plates, which remove the pulp. Next is fermentation and drying. Finally, the coffee beans are sorted and packaged.

Instructions for preparation
Coarsely grind your coffee.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
