The Honduras SHG EP organic coffee offers a balanced taste with notes of ripe fruit. You will discern a subtle citrus undertone accentuated with a caramel aftertaste. It has medium acidity, delivering a smooth, light crema. The name itself signifies this coffee's exceptional quality and parameters. The abbreviation SHG (Strictly High Grown) denotes the high altitude and correspondingly lower temperature where the coffee trees thrive. As a result, the fruit ripens more slowly, leading to a fuller flavor and excellent quality. The abbreviation EP (European Preparation) informs consumers that the beans are hand-sorted, ensuring the harvest's absolute purity.
Origins
Although Honduras, the origin of this SHG EP organic aabica, is relatively small in land area, it is the world's fifth-largest coffee producer. Despite recent decades of coffee plant diseases, it has become an increasingly potent supplier of top-quality coffee. Coffee plants were first planted in Honduras in the late 19th century. Currently, over 100,000 families participate in coffee production; 95% are small farmers, and 70% manage farms smaller than 2 hectares. Interestingly, the average age of Honduran coffee producers is declining. Young people perceive coffee cultivation and selling as a good investment and have successfully penetrated specialized markets.
The La Paz region, a recognized coffee area, fosters organic coffee plant cultivation at around 1,300m. They avoid any industrial fertilizers or pest sprays. The main harvest occurs between December and April. The farmers process the coffee cherries through washing, i.e., using water. The resulting green coffee is usually sun-dried.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
