Origins

You've probably heard of the Dominican Republic and Paraguay. You may know that they're beautiful countries, full of natural wonders. But less talked about is their agricultural production. Among other crops, they are the source of excellent cocoa and great sugarcane. The third ingredient present in this hot cocoa is natural flavoring that's been derived directly from chili peppers. No synthetics, no heartburn nor unpleasant aftertaste.

Cocoa from the Dominican Republic is described as one of the finest and tastiest in the world. Its production employs 40,000 farmers and indirectly up to 350,000 people. All of these people care about the prosperity of the cocoa industry, which in recent years has been supported by the government and the National Cocoa Commission. The Dominican Republic produces mostly organic, mild-flavored cocoa. It exports approximately 70,000 tons of cocoa annually. The USA and the Netherlands are the largest buyers.

True cocoa trees (Theobroma cacao) are usually grown on small plantations. The evergreen trees, which grow to a height of 5-8m, are kept at bush-height by the farmers. They are harvested twice a year. The fruit of the cocoa tree is a large yellow berry with white flesh inside. The fruit contains the seeds, called cocoa beans. Immediately after harvesting, the seeds must be removed, left to ferment for a few days, cleaned and dried. Only then can the crop go to the processing plant, where the beans are peeled, roasted and ground. From the resulting cocoa mass, cocoa butter and cocoa powder are separated in a rather complex process.

Sugarcane originated in Southeast Asia, but today the largest plantations are found in Cuba, Mexico, Brazil and of course, Paraguay. Around 3 million tons of sugar are produced there each year, of which 7,500 tons are destined for the US market. The sugarcane (Saccharum officinarum) is a tall and massive grass with stalks up to 5cm thick. Their soft pith hides the sugar. It is harvested with special machines or machetes. The cane has to be pressed and the juice boiled. Rapid cooling produces amber-colored crystals, i.e. cane sugar.

Both ingredients of the 42% Hot Cocoa Powder come from organic farming. The blend is flavored with a natural aroma that does not obscure the original taste of the ingredients, while not causing heartburn or any other health reaction. Only those with lactose intolerance should be careful.

Instructions for preparation

Stir 30g of cocoa powder into 150ml of hot milk.
If you prefer a thicker consistency, mix cocoa powder with milk in 1:2 ratio.
