This 100% specialty arabica has unique characteristics –⁠⁠⁠⁠⁠⁠ combining a spicy aroma with a sweet composition of apples, lemons, caramel and chocolate. The flavor is balanced and complex, with low acidity adding to its deliciousness. Dark roast brings out all its charming notes. The resulting drink has an elastic crema with small bubbles. This coffee makes a perfect espresso.

Origins

World-famous name, world-famous coffee. Lingtong is grown in a central region of Sumatra called Lingtong Nihuta near the volcanic lake Toba. Sumatran farmers process the coffee berries traditionally using the so-called wet or washed method. This gives the coffee heavier and earthier tones. The cherry-like fruit is harvested throughout the whole growing season in Sumatra. In this way, farmers can ensure that all the coffee beans are ripe. Coffee trees (Coffea arabica) are most prolific between the 4th and 8th year. Whole berries are harvested, often by hand. In the wet method, the berries are poured into large containers of water. Those that are of good quality sink to the bottom and are pushed through the crushing plates with the water. The pulp and some of the skins are thus removed. The subsequent fermentation will enhance the flavor of the kernels and help to separate the remaining blanks and fruit mucilage. The coffee beans are first dried in direct sunlight and then further dried to perfection in drying ovens. In the end, they are carefully sorted by hand and packed into 60kg bags.

More sparingly roasted coffee offers a richer and more complex flavour profile. It retains more authentic nuances specific to the growing region, including fruity, floral or nutty notes.

In particular, quality coffee roasted to its ideal profile may contain higher levels of antioxidants such as chlorogenic acid and other phenolic compounds. These substances have anti-inflammatory and antioxidant effects. Unroasted premium coffee is also gentler on the stomach, as it contains fewer acids that can irritate.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
