Origins
Known for its fascinating nature and the fastest animal runners on the planet, Kenya is also a major coffee producer. This goes without saying. But more importantly, coffee (especially arabica) has become a major export commodity for the country and the vast majority of the harvest is provided by small-scale farmers. They are not alone in this. They join together in cooperatives so that they can not only process the coffee but also sell it together at a fair price.
Local coffee trees (Coffea arabica) do particularly well in the central highlands, with acidic soil and the ideals amounts of sun and rainfall. The Nyeri District, overlooking Aberdare National Park, is just such a place, with its unusual vegetation, deep ravines and high waterfalls. The people of Nyeri are mainly engaged in agriculture but also work in light industry, hospitality and retail. Among the most important local businesses are Coca-Cola bottling plants, coffee and tea processing factories and milk packing plants.
Kenyan coffee is highly valued. Baristas seek it out for its intense aroma, rich body and distinctive flavors. The red coffee cherries are harvested by plantation workers several times a year to produce a ripe and high-quality crop. They process them by washing (pouring the berries into the water, mechanically removing the skins and some of the pulp, and transferring them to fermenting vessels where the coffee ferments). When the process is complete, the green beans need to be dried, sorted, packaged and sent out.
Although coffee production has long been a crucial part of Kenya's economy, it has faced many challenges in recent years. These include a drop in world market prices and the conversion of farmlands into building lands.

Instructions for preparation
Coarsely grind your coffee.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
