Origins
70% of the world's cocoa production comes from the West African region. It is reported that in Ghana, Ivory Coast, Cameroon and Nigeria, 1.5 million family farms (800,000 of them in Ghana) are employed in growing cocoa trees and processing their seeds. But unfortunately for most of them, cocoa income covers only the necessary living costs.
The Ghanaian government is paying attention to supporting farmers through institutional reform. The Cocobod organization there is directing its efforts not only towards marketing activities and promoting the sale of Ghanaian cocoa, but providing farmers with cocoa tree seedlings, funding road upgrades, supporting research into plant diseases and emphasising social services. The vast majority of Ghanaian cocoa farmers work on plots of 3 hectares.
Cocoa beans were first introduced to Ghana by Dutch missionaries in the early 19th century. Tetteh Quarshie, a blacksmith from Accra, was instrumental in their spread. It is probably thanks to him that cocoa is now the backbone of the Ghanaian economy. "Cocoa is Ghana, Ghana is Cocoa", say the Ghanaians.
The cocoa tree (Theobroma cocoa) is a tree that grows 5-8m tall. It flowers all year round and produces large pods containing 20-30 seeds. It is for these that the fruit is harvested. Farmers chop them up and remove the seeds (beans). They leave them to ferment for a few days and then dry them. In factories, the beans are roasted, crushed, ground. This complex process produces cocoa mass from which the cocoa butter and the cocoa powder are separated. Both raw materials plus, of course, many other ingredients are used to make chocolate. The popular delicacy is available in many versions: as dark, milk, white, bubble, iced or unsweetened chocolate.
