Origins
When red chocolate hit the market, it caused a stir. It happened on September 5, 2017, in Shanghai at a private event. It shook the culinary world and sparked the interest of confectionary makers, restaurants and lovers of home cooking and novel ingredients. Chocolate expert Angus Kennedy told the UK's The Sun, "It tastes so light and fruity you don't really realize you're gobbling up one chocolate the other."
His words are backed up by research from Haysack and Ipsos. Ruby chocolate is predestined to be a hit even in a country that does not particularly enjoy chocolate –China. What is the secret of this unusual product? We do not know the whole story, of course. The supplier only reveals that the chocolate is made from ''ruby cocoa beans'', the fruit of one of the many varieties of cocoa trees. They grow only in Ecuador, Brazil and the Ivory Coast. It is speculated that the ''ruby cocoa bean'' is processed unfermented and therefore retains its natural pink color. The patent for the production of ruby chocolate has been held by a Belgian Swiss company since 2009. Its director of innovation and quality, Peter Bone, has said that ruby chocolate is a "pure, hedonistic pleasure". A final note on the photogenic nature of ruby chocolate is in order.

Natasha Harding was blown away by her first bite: ''I’m totally down with millennial pink chocolate. But, while it’s heaven for Instagram," and adds, "there’s a gorgeous creaminess before a tsunami of berry tang hits your taste buds".
