The cinnamon flavor gives the coffee a pleasant taste and aroma. It complements well the natural sweetness of green beans. The slight acidity is refreshing, the spicy notes warm the palate and the stomach. The green coffee does not produce foam when poured over with boiling water.

Origins

A few years ago we established contacts with small coffee growers in Central America and since then we have been buying green coffee beans from them regularly. The long-term business relationships with local retailers have been excellent. We can be sure that they take the utmost care of the coffee. It is usually their only source of livelihood. In the poor mountain areas, it is harvested and processed only by hand, and the coffee trees are grown without industrial fertilizers and treatment substances.

The coffee trees of Central American plantations are harvested almost all year round. Their cherry-like fruit ripens gradually. They are mostly picked by women and girls. The coffee is transported in large sacks for processing. The so-called wet-processed process is more complex and expensive than the dry process, but results in a much higher quality coffee with fresh, fruity or floral notes. It begins by pouring the fruit into tanks of water and pushing it through crushing plates. This removes the pulp. The loosened seeds go into fermentation vessels where they ferment for up to 36 hours. Bacteria break down the skins and the plant mucilage. Finally, the green coffee is dried, either in direct sunlight or in drying ovens.

To give the green coffee a cinnamon flavor and aroma, it is mixed with ground spices and flavored with natural aromas. This does not contain any synthetic flavor carriers or heavy metals, so it is in no way harmful to health.

Green coffee benefits:

Unroasted coffee beans contain many more health benefits than its roasted counterpart. This is because they have not been subjected to high heat, so there is no decrease in antioxidants or caffeine content. The essential chemical for which green coffee is so popular is chlorogenic acid. Effects of chlorogenic acid, referred to as CGA are:

• promoting breakdown of fats,
• preventing the conversion of sugars to fats and flushing them from the body,
• accelerating the burning process and promoting weight loss as well as reducing appetite

Caffeine in green coffee:

• reduces fatigue and improves concentration,
• contributes to mental and physical vitality;
• relaxes muscles, relieves pain and stress and increases performance.

The ratio of CGA acid is 100,000mg/1kg. Green coffee has antibacterial properties, reducing the risk of diabetes and cardiovascular disease. Drinking green coffee also reduces feelings of hunger.

CAUTION: Green coffee beans are very hard and require a top-quality grinder to grind them. Green coffee can damage commercially available machines. Therefore, we grind the coffee only coarsely. We recommend preparing the beverage by simply pouring boiling water over the ground coffee or using a French press.
