Origins
In the heart of Nicaragua, between the Pacific Ocean and the Caribbean Sea, lie the mountainous regions of Matagalpa and Jinotega. A poet might say that they are the landscapes of fog, heavy rainfall, and volcanic soil. It is here that Nicaragua Washed SHG EP Las Campanillas Arabica is grown; a coffee ranked among the purest and best-processed beans in Central America.
The abbreviation SHG (Strictly High Grown) indicates that the coffee trees grew high in the mountains, where lower temperatures cause the fruits to develop more slowly and concentrate more sugars and aromas in the beans. The EP (European Preparation) designation confirms that each bean has been hand-sorted and meets strict European quality standards.
The Rizo family farm – the one responsible for cultivating this coffee – is one of the most respected in the region. For more than two centuries, it’s been tending hundreds of hectares of plantations, where harvesting is done exclusively by hand and with respect for the environment. The coffee trees grow in the shade of local trees, which protect the soil and natural biodiversity. After harvesting, the coffee cherries undergo processing using the washed method. This enhances the fresh, clean tones and ensures the exceptional consistency of the resulting coffee.
We roasted Las Campanillas beans to a light roast level intended for pour over coffee. This type of roasting emphasizes their natural character and develops delicate, fruity, and floral tones that would be lost in a darker roast. As a result, the coffee retains its higher acidity, sparkling freshness, and multi-layered flavor. It’s light on the tongue but has a distinctive aromatic structure. This makes it the ideal choice for lovers of filter coffee who want to experience the true essence of this gem.
We also have to mention that Las Campanillas coffee regularly ranks among the select Arabica coffees with a rating of over 83 points according to the SCA, which confirms its top quality.

Instructions for preparation
- Coarsely grind your coffee.
- Using a V60 filter, add 1g of coffee per 14ml of water.
- Using circular motions, cover the coffee with boiled water (93°C).
