Bourbon coffee variety from the Sul de Minas region is known for its full and round taste as well as slight sweetness. We’ve enhanced this already amazing decaf even further and added the flavor of French liqueur, yet kept the acidity and crema intact.
Origins
Decaffeinated coffee beans from the Sul de Minas region in Brazil are highly regarded for their quality and distinctive flavor. Brazil is the largest coffee producer in the world and the Sul de Minas is one of the country's main coffee growing regions, known for its rich tradition and ideal growing conditions. For coffee It’s located in the southern part of Minas Gerais and is known for its temperate climate, high altitude and fertile soil. These factors contribute to the production of coffee with a balanced flavor, mild acidity and rich body. The region is home to many small farmers who often favor traditional coffee growing and processing methods, which produce high quality coffee and unique flavor profiles.
Coffee cherries are harvested in Sul de Minas from June to September. The workers process them by washing them in water; they pour the fruit into tanks where they mechanically remove the top skin, then wash it and leave it to ferment. During the natural fermentation process, the coffee beans are released from their mucilage. The green beans then need to be well dried and if they are to be decaffeinated, they undergo further processing, which, in this case, is a certified Swiss Water process.
The coffee is steeped and stirred in hot water for 10 hours, which helps to gradually extract the caffeine which is then captured by activated carbon filters. The result is coffee containing less than 0.1 percent caffeine. The advantage of this rather demanding and expensive technology is that it uses no chemical agents and is very gentle on the unique aroma of the coffee. Coffee processed in this way is dried again and then "rests" in bags for some time. Once the experts know it’s time for roasting, the next step comes into play. If the coffee is to be perfectly roasted and also flavored, it is necessary to work with a carrier oil with aromatic substances.
Our roaster prefers natural aroma and sprays it on the coffee before roasting. This ensures that the aroma and flavor are well incorporated into the beans and also remain for a long time after roasting. Bourbon coffee from the Sul de Minas region of Brazil is known for its full, round body and light sweetness. We have enriched this already great decaf with the aroma of French liqueur, which doesn’t affect the acidity or the crema.
Making Flavored Coffee in an Automatic Coffee Machine

If you intend to make flavored coffee in an automatic coffee maker with a tray, we recommend checking the instructions for the coffee maker to ensure this is possible. If the machine manufacturer does not provide any information on flavored coffee, follow these recommendations: The natural aroma in this coffee may react with the plastic in the tray and cause it to spot on prolonged contact.
Apply same rules when grinding flavored coffee in grinders (both manual and electric). |

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
