This coffee catches you attention at the first glance. Its beans are among the larger ones and stand out with their regular shapes. If you try it, you'll appreciate the full flavor with notes of caramel, cocoa and nuts. More sensitive or experienced coffee drinkers will identify undertones of citrus fruits or apples. The coffee has a velvety texture, creating a pleasant crema.
Origins
As we mentioned in the introduction, we brought Aladino Delgado coffee from a small plantation in northern Peru. In one of the twelve districts of the Cajamarca region, Chontali, the bourbon and typica coffee trees are tended by the selfless Aladino Delgado. Why selfless? According to our information, he not only works hard to provide for his own large family, but also tirelessly helps and advises his "colleagues". One reason is probably the fact that, like them, he has joined a local association called Cenfrocafe, whose mission is to improve the working and living conditions of farmers, helping them with marketing and maintaining the high quality of each product.
Cenfrocafe was founded in 1999, today has around 2,000 members and very often represents the top finalists in international and national coffee quality competitions. Founder Anselmo Huaman Moreto once commented: "the huge difference in our lives is that now our children can actually go to school, our coffee is recognized in the market for its quality, we get a fair price for our efforts, and our members can be proud to be farmers again."
We should also stop at Chontali district. It is its location and natural conditions that shape the taste and aroma of the coffee. Chontali lies in the upper part of the Huayllabamba river basin in the Chunchuca valley. The climate is humid and subtropical. The mild climate and the fertile soil, which is cultivated without any pesticides, encourage the production of vegetables, fruit and, of course, coffee. In 1998, it made up 58% of the farmable area.
Mr Delgado's farm has chosen a particularly interesting way of processing coffee cherries. The process is similar to the conventional wet method, except that fermentation takes place in ceramic containers and drying takes place in a special microclimate-controlled "greenhouse". Thanks to this method, the coffee has a truly unmistakable and multi-layered flavor.
Peru Aladino Delgado has been awarded in a number of competitions. It has also been chosen by the Starbucks chain for its special edition. According to its website, you can only get it in select stores because it is only available in limited quantities.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
