The Diamante Verde SHB EP is one of the coffees with intense notes of fresh fruit. You can easily identify green apples, green grapes, refreshing lime, and even milk chocolate in the undertones. It is a lively, sparkling coffee with a long, pleasant aftertaste and a beautiful balance of all the aromatic components.
Origins
We will first look at where this coffee comes from. Peru's San Martin region is the 3rd largest coffee-growing area in the country. One of the largest local farmer cooperatives is called Oro Verde, founded in 1999. The Diamante Verde cooperative only started writing its history in 2017, but it is getting better every year. 3 years after its creation, it had over 200 members. Due to the initial lack of finances, its farmers farmed on plantations without the use of industrially produced fertilizers and sprays.
They managed to turn what seemed to be a disadvantage into a great advantage. Their beginnings in organic coffee farming were crowned with organic and Fair Trade certification. The young cooperative had to work its way up from scratch. As a result, they know exactly what the coffee plants in the San Martin region need, how to care for them, how to process the harvest, and how and where to sell it profitably. Sharing knowledge among the cooperative members has helped farmers on their path to superior coffee, teaching them to choose the best-growing practices and processing methods.
Diamante Verde farms small plantations, often surrounded by wildlife. The soil is volcanic, so it has high mineral content. The hillsides are crisscrossed by a series of springs, which are beneficial for the coffee plant. The harvest usually takes place from April to July, sometimes in August, depending on conditions.
Farmers head out to small plantations without the aid of machinery, plucking the red coffee cherries by hand. It is typical in Peru to process coffee by what is known as washing. Workers pour the cherries into water and push them through crushing plates. In this way, they remove the top skin. The harvest is then transferred to vats of water, where it ferments for several days. During this time, the pulp enveloping the green coffee beans decomposes. Once released, the farmers have to clean them, wash them in fresh water, and dry them on terraces.
The Diamante Verde coffee beans are labelled SHB and EP. Only beans harvested at 1,200m and above are given this designation. Why is this important? Because high-altitude coffee takes longer to mature and can absorb more aroma from its surroundings. The letters EP (European Preparation) indicate that the coffee is intended for the European market. That is because it has been sorted by size and color, while defective beans have been removed.
Peru exports its coffee mostly to the US, Germany, and Belgium. Across the country, more than a quarter of a million families are involved in the coffee industry, with about a quarter of them working in cooperatives or associations. There are currently around 80 of these in Peru.

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
