Who doesn't love cherries in rum. The fresh fruit combined with the warming alcohol is a must for everyone. Delicious plantation arabica provides a backdrop for a truly unque beverage. It has low acidity but full body and a subtle sweetness. The foam is creamy, very fluffy and cohesive.
Origins
The small farmers in the high Andes from whom we buy our plantation coffee care for the coffee trees with great love and humility. They do not fertilize them or treat them with chemical sprays because of the difficulty of accessing them through the mountain terrain. This puts Puno coffee on a par with organic coffees. It can compete with other world coffees in terms of quality, as the region focuses on the Arabica Typica variety, which is characterized by its excellent quality.
Coffee cherries are harvested continuously throughout the season, taking 9-14 months to mature. Processing by washing removes the pulp and skins. The water-intensive process (up to 150l of water is needed to produce 1kg of coffee) bears its fruit. The washed coffee has a fresh aroma and full body. The cherries are poured into special tanks, stripped of their pulp by machine and the loosened beans are finally fermented in fermentation vessels. The result is green to greyish beans that need to be dried either in direct sunlight or in drying ovens. However, it is always necessary to prevent the possible formation of mold.
Our roaster only flavors the beans shortly before roasting. He sprays them with a carrier oil with a natural aroma according to the customer's wishes and then conditions them. This process injects the aroma deep into the coffee and releases it beautifully during grinding and extraction.
Making Flavored Coffee in an Automatic Coffee Maker

If you intend to make flavored coffee in an automatic coffee maker with a tray, we recommend checking the instructions for the coffee maker to ensure this is possible. If the machine manufacturer does not provide any information on flavored coffee, follow these recommendations: The natural aroma in this coffee may react with the plastic in the tray and cause it to spot on prolonged contact.
Apply same rules when grinding flavored coffee in grinders (both manual and electric). |

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
