Origin
Ghana is no newcomer among cocoa producers. It is its main agricultural export commodity and is the second largest exporter of cocoa in the world after the Ivory Coast. The first cacao trees (Theobroma cacao) are said to have been planted in 1879 by farmer Tetteh Quarshie. He brought the seeds back from an expedition to Equatorial Guinea and planted them in the soil in the Mampong area near Accra.
Current Ghanaian plantations are no more than 3 hectares in size, and farmers have struggled (and often still struggle) with neglected infrastructure, labor shortages and other difficulties. The local government has long been trying, with more or less success, to restructure cocoa production by replacing old trees with new ones, upgrading roads, building modern irrigation systems, researching the impact of drought and fertilizers on produce... The results of these measures are already starting to show in the growing production of quality Ghanaian cocoa.
But it will be a long time before cocoa beans become chocolate chips. To simplify the process, the cocoa bean harvesting and the difficult 'extraction' of the seeds from the pulp is quite difficult at the beginning. Then comes the fermentation of the cocoa beans, followed by drying. The crop is transported to the processing plant, where the cocoa beans are roasted and ground. The raw material is further processed using a complex process to produce pure cocoa and cocoa butter. The two raw materials are mixed together in various proportions, adding, for example, milk powder, natural vanilla extract, sugar and so on. The mixture then needs to be tempered, cooled, reheated until it reaches the desired parameters.
High-quality chocolate is not only delicious, but also rich in antioxidants, vitamins and minerals. Only people with allergies to milk, cocoa and vanillin should be cautious when consuming it.
Chocolate chips should be stored at 12-20°C.
