Chocolate Chips Grand Cru Bagua Nativo Peru have a full, balanced and slightly acidic flavor. With notes of true cocoa beans that are clearly distinct, it is a harmonious and extremely pleasant chocolate. The cane sugar adds a roundness and sweet sensuality.

These chocolate chips are perfect for melting in warm dairy or non-dairy milk. They can also be stirred into breakfast porridge to add a little sweetness, used for desserts or combined with alcoholic beverages.

Origins

We won't keep you guessing for long and we'll break down the name of these chocolate chips right at the beginning. Peru is the cradle of cocoa, organic means it's been produced without the use of artificial products, and finally, Bagua is an ancient variety of cacao tree.

There is ample evidence that the ancient inhabitants of the Peruvian Amazon rainforest were the first to taste cacao, the "food of the gods". The Mayans discovered the secret of the cocoa bean in the 4th century which they used to make a bitter and stimulating drink. The truth is that it took several hundred years for chocolate to take on the shape and flavor we know today. However, Peru is now a top cocoa bean producing country, producing magnificent cocoa and some of the best chocolate in the world. Those who have tasted these Peruvian delicacies on their travels will always remember them. In South Peru and in the city of Cusco, just off the town square, there is a whole museum dedicated to chocolate.

Chocolate production is a complex and long process. It takes many weeks from the harvesting of the cacao trees, where cocoa beans grow covered in a thin white skin. They have to be removed, processed and shipped in the shape of the chocolate chips. The beans must be fermented, dried, roasted and peeled. They are then transported to the production lines where machines crush and grind them. This produces a cocoa mass containing both cocoa and cocoa butter. The raw materials must first be separated from each other and then mixed again in the correct proportions.

When the conching is done, other ingredients are added, and the chocolate is kneaded, tempered, whipped, and chilled. Using high-quality raw materials, the right production process, and strict supervision of the quality of the products, the result is a treat that even in its darkest form sweetens anyone's life.
