Chocolate production is a complex and long process. It takes many weeks from the harvesting of the cacao trees, where cocoa beans grow covered in a thin white skin. They have to be removed, processed and shipped in the shape of the chocolate chips. The beans must be fermented, dried, roasted and peeled. They are then transported to the production lines where machines crush and grind them. This produces a cocoa mass containing both cocoa and cocoa butter. The raw materials must first be separated from each other and then mixed again in the correct proportions.
When the conching is done, other ingredients are added, and the chocolate is kneaded, tempered, whipped, and chilled.
