Colombia Embrujo Anaerobic Natural is fascinating to say the least. You will notice blackberries, red fruits and cocoa, a subtle sweetness and slight acidity. Prepare it in a French press or an espresso machine. Its unique notes will also develop well in cold brew.

Origins

This coffee is really something! Colombia Embrujo Anaerobic Natural comes from the Finca El Embrujo farm, located at an altitude of 1,450-1,900m. The Anserma area in the Caldas region of Colombia was so enchanting that the father of the current owner bought the first 12 hectares of land there more than 50 years ago. He has gradually expanded the farm, which now covers 170 hectares. His son Ignacio Rodriguez has taken over the care of the coffee trees.

His mission is to replace the traditional approach to processing coffee cherries with a modern, innovative and "magical" one. So, he chose anaerobic fermentation or fermentation without oxygen. What does this mean? For anaerobic fermentation, only 100% ripe fruit needs to be selected, so the workers pick them by hand. If, by chance, a poor-quality cherry escapes the pickers' attention, the workers discover it during the manual sorting process. The perfect harvest is partially stripped of its skins, scattered in leak-proof bags and placed in water tanks. In this way, in an oxygen-free – or anaerobic – environment, they ferment for up to 100 hours. During this time, the farmer monitors the sugar content and pH of the bags until he considers fermentation to be complete. Finally, the coffee needs to be emptied from the bags, slowly dried, cleaned and left to rest. Only after the necessary "resting" can the coffee go to the customer.

Ignacio Rodriguez is known for his positive approach to protecting nature – he uses the water with husks from the coffee cherries as fertilizer for the coffee trees, and his processing plant is powered by solar energy. He also supports local women, employing nearly 50 of them year-round. Many are single mothers who depend on the farm for their livelihoods.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (94°C).
