We might’ve not yet found the golden troves of El Dorado, but we’ve managed to uncover a different kind of Colombian treasure. On our adventure, we came across a farm called Finca Monteblanco, which offered us coffee so exceptional that any real treasure pales in comparison. This unique coffee is cultivated among the mountains and rivers of the Huila region and is the perfect choice for your filter. The coffee is carefully selected and fermented with local passion fruit. This process gives their coffee an enchanting, refreshingly sour flavor. So, instead of the golden troves, we brought back the riches of each sip that this light roast offers.

Coffee from the Huila region is ideal for preparation on filter, which best retains its rich flavor profile. The flavor is full with hints of pleasant acidity. Fermentation with the addition of passion fruit and other local fruits gives the coffee fresh fruity notes, mild acidity and a balanced sweetness. Colombia Huila Monteblanco has a pure flavor profile and a light color that is typical of the filter.
Origins
The coffee plants belong to the Finca Monteblanco farm, located in the Acevedo region of Huila, Colombia. The area is known for its high altitude of 1200-2000m and rich volcanic soil, ideal for growing premium quality coffee. Finca Monteblanco farm focuses on growing varieties such as Caturra, Geisha, Pink Bourbon and Pacamara, which are known for their unique flavor profiles.
The coffee there undergoes a meticulous harvest process that involves hand-picking the cherries and fermenting them. This batch is made with Purple Caturra variety, which has a higher sugar content than the regular red Caturra. The cherries are fermented using a mixture of yeasts and lactobacilli enriched with local fruits such as passion fruit and cholupa. The fermentation process lasts 8 days and contributes to a complex flavor with fruity notes and mild acidity. After fermentation, the coffee is dried on parabolic beds, ensuring an even drying and preserving its high quality.

Instructions for preparation
- Coarsely grind your coffee.
- Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
- Using circular motions, cover the coffee with boiled water (93°C).
