Highland plantation coffees hold a high status worldwide, and green coffee is no exception. 100% arabica from the Villa Maria plantation in Colombia never disappoints. Unroasted, it even retains a higher concentration of health benefits. These are helpful for losing weight, fighting off germs, and tackling bad moods.

Green coffee has almost no foam. In return, we get a mild, slightly sweet taste, resembling green tea. There is zero bitterness, and the acidity is minimal. Some people have to get used to the specific taste of green coffee, but with each cup it just gets more and more delicious.
Origins
The origins of this green coffee can be found on the plantations of South American Colombia. The area of the so-called Caribbean is characterized by a variety of altitudes and, therefore, temperatures. In the Andes, where the Villa Maria region is located, frequent rains and lower temperatures are common. The average temperature in Colombia reaches 18°C.
The cultivation of the Arabic coffee tree (Coffea arabica) in Colombia is mainly the affair of smallholders. Their coffee can be compared to organic coffee, as access to the plantations is very difficult, and fertilization or chemical sprays are almost impossible. Moreover, they are unaffordable for small farmers. Coffee trees are harvested continuously as their fruit ripens. The cherry-like berries are processed by washing in Colombia.
This is a process that uses large amounts of water – up to 150l to produce 1kg of coffee. But the result is coffee of exceptional quality, with whole and clean beans. The washing process begins by placing the coffee cherries into tanks of water. The low-quality fruit remains on the surface is removed. The rest is pushed through special plates to remove the pulp. This is followed by fermentation, during which the loosened coffee beans are stripped of the last remnants of pulp and mucilage. The coffee is dried first in direct sunlight, then in drying ovens.
Green coffee is not roasted nor otherwise treated so it retains maximum health benefits.
Green coffee benefits:
Unroasted coffee beans contain many more health benefits than its roasted counterpart. This is because they have not been subjected to high heat, so there is no decrease in antioxidants nor caffeine content. The essential chemical for which green coffee is so popular is chlorogenic acid. Effects of chlorogenic acid, referred to as CGA are:
- promoting breakdown of fats,
- preventing the conversion of sugars to fats and flushing them from the body,
- accelerating the burning process and promoting weight loss as well as reducing appetite
Caffeine in green coffee:
- reduces fatigue and improves concentration,
- contributes to mental and physical vitality;
- relaxes muscles, relieves pain and stress and increases performance.
The ratio of CGA acid is 65,000mg/1kg. Green coffee has antibacterial properties, reducing the risk of diabetes and diseases related to high cholesterol. Drinking green coffee also reduces feelings of hunger.
CAUTION: Green coffee beans are very hard and require a top-quality grinder to grind them. Green coffee can damage commercially available machines. Therefore, we grind the coffee only coarsely. We recommend preparing the beverage by simply pouring boiling water over the ground coffee or using a French press.

Instructions for preparation
Use 2 teaspoons (7g) of green coffee.
Pour over with 150ml of boiled water (100°C).
Steep for 5 minutes.
