Origins

What do we know about chocolate? It‘s one of the most popular and sought-after sweet treats in the world. However, its production is a complex process that begins with the harvesting of the fruit of the cacao tree (Theobroma cacao), which grows in tropical regions.

After harvesting, the large, usually yellow, fruits are opened, and the beans are removed and fermented. This stage is crucial for creating the characteristic flavor of chocolate, as fermentation converts the tannins from cocoa beans into aromatic and tasty substances. After fermentation comes drying and then roasting. It brings out the rich and deep flavor and the length of roasting influences its intensity. Finally, the roasted beans need to be ground, which produces a mass that need to be separated into cocoa powder and cocoa butter.

By combining cocoa powder, cocoa butter and other ingredients (such as sugar and milk), chocolate mass is produced. This then needs to be processed to produce different types of chocolate such as dark chocolate, milk chocolate or white chocolate. Adding fruit, nuts or spices adds to the range of chocolate flavors.

Thanks to its variety and versatility, chocolate appears in many recipes and sweet dishes. From chocolate desserts and cakes to hot chocolate and chocolate drinks, the possibilities are almost endless.

Chocolate goes perfectly with coffee. Try for yourself if you prefer it in a latte, cappuccino or an espresso. Personally, we recommend iced coffee!
