The Honduras SHG Decaf coffee does not deny its origin. Honduran harvest is often characterized by caramel, chocolate, and berries and this SHG decaf has it all. Fresh redcurrants nicely complement the pleasant sweetness. The complex flavor is enhanced by medium roasting. The crema is smooth, light, and compact.
Origins
More than 100,000 families in Honduras are growing coffee trees, of which about 3/4 farm less than 2 hectares. Plantations are planted at an altitude of around 1,500m. That is also the case with decaffeinated, Strictly High Grown Honduras, which comes from the Copan region in the western part of the country. As well as being a major producer of hogh-quality coffee, you may also know of an archaeological site, one of the largest cities of the Mayan civilization.
This coffee is grown and produced by farmers associated with the Cooperativa Cafetalera Capucas Limitada, an organization dedicated to supporting farmers, their education, and tourism development (especially eco-tourism). The cooperative also runs a restaurant and several greenhouses and keeps bees. Its main objective is to enable independency and economic growth of its members. It also allows some farms to focus on growing organically certified coffee. Producing organic coffee is more challenging and costly because, without industrial sprays and fertilizers, coffee trees have lower yields and are more vulnerable to pests.
Wondering how the coffee beans were decaffeinated? We opted for the trademarked Swiss Water method – a perfected process in which the coffee is immersed in hot water, and the extracted caffeine is captured in activated carbon filters. Filtration is circular and takes several hours. Because the caffeine molecules are relatively large, they remain in the filters while the molecules of aromatics and other substances that contribute to the coffee's unique flavor and aroma pass through the filters and return to the beans. The biggest advantage of the Swiss method of decaffeination is that it uses no chemical solvents at all and returns the water used in the process back to the coffee plants for irrigation.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
