Honduras SHG EP Los Geranios has the signature characteristics of its homeland. Like other coffees there, the flavor has notes of nuts and dark chocolate, offering a pleasant citrus acidity, subtle floral notes, and traces of juicy grapefruit. The body is round, and the overall impression is very balanced.
This coffee is great for espresso, latte, or a cappuccino. The unique taste also stands out when brewed on a filter or a vacuum pot.
Origins
The Siquatepeque region, which lies in central Honduras, is often shrouded in fog and sprinkled with light rain. It's a hilly landscape covered in endless forests, and thats why coffee bushes thrive here. The fruit ripens in a slower rate and in the shade, making the beans exceptionally rich in flavor.
One of the farming cooperatives in the area is COHORSIL. It has been bringing farmers together for over 40 years, allowing them to pass on and develop rich farming practices and special techniques. The cooperative also produces Honduras SHG EP Los Geranios, a hand-harvested and hand-washed arabica of the Catuai variety. These compact plants have high soil quality requirements and average yields, but very good bean flavor characteristics.
Honduran farmers harvest their coffee from November to April, always paying careful attention to the coffee cherries' maturity and processing. As we've said, they use the so-called wet method, placing the fruit of the coffee tree into the water and pressing it through crushing plates to remove the top skin. The coffee then goes into fermentation tanks. During fermentation, the pulp enveloping the green beans is dissolved. After a few hours to days, the coffee must be removed, rinsed, cleaned, and dried. Usually, workers spread it out on concrete beds and let it dry freely, with frequent raking to prevent the harvest from molding.
Honduran coffee was a somewhat unassuming crop until a few years ago. It has also come to the forefront to the world's baristas thanks to the government's investment in education, processing techniques, and infrastructure development. This has opened up new opportunities for farmers. In just a few years, the former exports to neighboring Guatemala, where most of the production went, have expanded to include the US, Japan, Canada, Belgium, South Korea, and other countries.
The SHG (Strictly High Grown) designation is used for coffees originating from high mountain areas and the letters EP explain that the beans have been processed and graded according to European standards.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
