Origins
For the East Coast of Central Africa, coffee production is part of the national identity. The small-scale farmers who still cultivate coffee plants in Tanzania today originally planted them for their own use. However, during colonization, they turned coffee into a source of income, and today up to 90% of Tanzania's entire coffee production comes from smallholders. Oldeani is a hilly region renowned for its diverse flora and fauna.
Tourists know Mountain Oldeani as safari place. However, the favourable climate and suitable soil conditions are more important for growing coffee plants (Coffea arabica). The cherry-like fruit of the coffee tree is harvested several times in succession. The reason is simple – they ripen gradually. The first time farmers can go out to the plantations is three to four years after the bushes have been planted. In Tanzania, coffee cherries are processed by washing. First, they place them into large containers of water, where good-quality fruits sink to the bottom and the rest is picked from the surface. Along with the water, the cherries are pushed through crushing plates to remove the pulp.
Each fruit produces two kernels.
These are immediately fermented in big fermentation tanks. Finally, it's time for drying and the sorted and bagged coffee is traded. Roasting is a delicate process that the best retailers perform just before handing the coffee over to the customers. In fact, the coffee reaches its peak of flavor a few days after roasting. Then, the precious aroma fades away.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
