Honduras SHG EP Los Geranios coffee is characterized by bright acidity, seductive grape notes and floral lightness. In addition, preparation on a filter or V60 allows you to enjoy touches of dark chocolate and nuts. Overall, this light roast coffee is fresh, complex and rich.

Origins

The Siquatepeque region (located in central Honduras) is often shrouded in fog and sprinkled with light rain. It is a hilly landscape covered with endless forests where coffee bushes thrive. The fruit ripens more slowly and in the shade, so the coffee is extremely rich in flavor.

One of the cooperatives that farm in the area is COHORSIL, which has been bringing farmers together for over 40 years, allowing them to pass on and develop rich farming practices and special techniques. One of their coffees is the Honduras SHG EP Los Geranios, hand-harvested and washed arabica of the Catuai variety. These are compact plants with high soil quality requirements and average yields but good flavor characteristics of the coffee beans.

The Honduran farmers harvest the coffee from November to April, always paying careful attention to the maturity of the coffee cherries and their processing. As we have said, they use what is known as the wet method, pouring the fruit of the coffee tree into the water and pressing it through a crushing plate to remove the top skin. The coffee then goes into fermentation tanks. During fermentation, the pulp enveloping the green beans is dissolved. After a few hours or days, the coffee needs to be removed, rinsed, cleaned and dried. Usually by spreading it out on concrete beds and letting it dry freely, with frequent raking to prevent the harvest from becoming moldy.

Until a few years ago, Honduran coffee was a rather unremarkable crop. It has also come to the forefront of the world's baristas thanks to the investment the government has made in education, the development of processing techniques and infrastructure. That has opened up new opportunities for farmers, with exports to neighbouring Guatemala, where most production used to go, and allowed them to expand their market to the USA, Japan, Canada, Belgium, South Korea and other countries.

One more fact, this time about the name of the coffee: The SHG (Strictly High Grown) designation is used for coffees from high mountain areas, the letters EP explaining that the coffee has been processed and graded to European standards.

More sparingly roasted coffee offers a richer and more complex flavour profile. It retains more authentic nuances specific to the growing region, including fruity, floral or nutty notes.

In particular, quality coffee roasted to its ideal profile may contain higher levels of antioxidants such as chlorogenic acid and other phenolic compounds. These substances have anti-inflammatory and antioxidant effects. Unroasted premium coffee is also gentler on the stomach, as it contains fewer acids that can irritate.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
