The same is true of Tanzanian cocoa.
Cocoa trees have probably been grown in Tanzania for a very long time, but it wasn’t until the 1960s that local farmers began to produce cocoa from their fruits. Until then, they sold cocoa beans in what is known as wet form, i.e., only cleaned, unfermented, and undried. With the global growth in demand for high-quality cocoa, cocoa production has revived and interest in growing cocoa trees has increased.
The cocoa tree (Theobroma cacao) is an evergreen tree that originated in the rainforests of South and Central America. The flowers grow rather unusually directly from the trunk and are pollinated by tiny flies. The fruit of the cacao tree is a berry with longitudinal grooves which contain chambers with seeds – the cocoa beans. These need to be removed and processed.
The most common method of producing cocoa powder begins with fermentation, followed by drying and pre-roasting the beans. The harvested beans are then sent to a factory, where they are sorted, cleaned, and roasted again. Next, they are crushed, ground, and pressed. Cocoa powder and cocoa butter are separated from the resulting mass.
