Panama Reserva Candela is a moderately acidic, light, and balanced coffee. The flavor combines dark chocolate with citrus – the delicate lemon aroma is extremely attractive. Because it is an arabica, the crema is low but compact and long-lasting. This coffee is excellent when prepared on a filter, in a moka pot, or an automatic coffee machine. Its mildness makes it perfect for all-day sipping.
Origins
Back at the turn of the 20th century, Panamanian coffee didn't have a good reputation worldwide. But the Republic of Panama has faced up to this fact, and in order to boost the commodity value of its coffee, it held a competition called The Best of Panama, in which it awarded prizes to the best batches. A subsequent online auction succeeded in introducing premium Panamanian coffee to global buyers. Today, the list of top coffees is "occupied" not only by Panama's Geisha but also by several other varieties with excellent properties.
The measures taken to save the reputation of Panama's coffee would not have brought Panama to the center of attention alone. Its popularity is also due to the excellent natural conditions in which the coffee trees grow and the excellent care provided by the farmers.
The Candela region is located in the province of Chiriqui. It lies in the west of Panama, on the Pacific coast. It is characterized by a very diverse climate, including hot and humid lowlands and cool, rainy highlands. For the locals, Chiriqui is a popular tourist destination, offering miles of pristine beaches, spectacular mountain scenery, hot springs, lush rainforests, and snorkeling among the reefs of the Pacific Ocean. If you ever visit Chiriqui, you won't want to miss the climb up Panama's highest mountain, Barú Volcano. Farmers have chosen to grow this great arabica at the foot of this mountain.
Panama Reserva Candela arabica comes from plantations farmed by the Gallardo family. Its members look after the farms Finca La Santa, Finca Zambrano, Finca Santa Clara, and Jurutungo. The harvests from all these farms are considered excellent, dating back to 1960. The Gallardos pay great attention to be in control of the entire coffee production process. They manage the harvesting of the ripe coffee cherries, their processing and the drying of the green coffee beans with great care. The Arabica Panama Reserva Candela is a selection of the best beans from a particular harvest and represents the family farm in an absolutely top-notch way.
The coffee acquires pleasant fruity notes and balances through the so-called wet processing, during which the harvest is left to ferment in large tanks of water. This is also emphasized by the variety of coffee plants chosen – in this case, Caturra. Its fruits are known for their sweet, complex, and fresh taste. Caturra beans are the most sought-after and account for a full 60% of the total coffee consumed.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
