Grown in the renowned Eastern Highlands region, this coffee is as spicy and varied as its homeland. Local coffee is cultivated on small, family-run plantations.

Evenly sized beans, smooth flavor with a round body and medium acidity – this coffee from Papua New Guinea is a quite recent development. It contains maximum amounts of pleasant undertones of fruit and spices, making it a unique experience. The coffee is roasted in a way to bring out its aromatic qualities. The crema can be described as full-bodied, medium-thick, and light in color.
Origins
The coffee trees (Coffea arabica) are a novelty in Papua New Guinea. They were first brought in around 1950. The planters, small family farmers, focus on both arabica and robusta. The fields are mostly established in the clearings of deep forests that are inaccessible to machinery. This is why local coffee can be considered a product of organic farming – no industrially produced fertilizers nor treatments can even reach the coffee trees. The harvesting process is also 100% manual.
To ensure a high-quality harvest, the local government has introduced coffee quality standards. As a result, the lowest quality beans have disappeared from the market altogether and Papua New Guinea coffee is climbing steadily up the popularity ladder among the world's top coffees.
The harvested coffee berries are processed by what is known as the washed process. Whole berries are placed in water tank, where the poor quality ones are picked from the surface and the rest sinks to the bottom. The flesh and some of the skins are removed by pushing the berries through special plates. This is followed by fermentation and drying. Finally, the coffee beans are inspected, sorted and packed in jute bags.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
