Caffeine-free, yet rich and full-flavored. What’s the secret of this unique coffee with an appealing strawberry aroma? Mostly the special Swiss Water Process of decaffeination, which was invented in Switzerland in 1933 and perfected in 1970’s in Canada. It’s loved in the professional circles, especially because the process doesn’t involve any chemical solvents and instead relies on water and charcoal to filter out the caffeine content.
The method is based on osmosis and the ability of caffeine to dissolve in water. It all starts with a special water solution that’s been saturated with all water-soluble substances beside caffeine. This is obtained from coffee that’s already been decaffeinated, so it contains some beneficial aromatic properties. Then, green coffee is submerged in this extract and osmosis gets to work on the difference in concentration – caffeine naturally moves on its own from the whole coffee beans and into the solution, leaving behind everything else. The solution is then pressed through special filters that catch the caffeine molecules. This process is repeated until decaffeination is complete, usually at around 99.9%. In the end, the beans are dried to their original moisture levels and roasted, as they usually would.
Some of the biggest advantages of this process are zero chemicals and the retention of the coffee’s original properties such as flavor and aroma. It’s also environmentally friendly and coffee processed with Swiss Water method keeps its organic label. Though, it’s not all just positives: the whole thing can take up to 10 hours, which is way longer than chemical decaffeination, and that also comes with higher monetary costs. What’s more, the technology is trademarked and exclusive to only a few factories across the world, which makes its availability very limited.
But we prefer quality over quantity. So, we’ve opted for coffee decaffeinated with this demanding method to improve with our flavor. Instructions for preparation
1. Grind your coffee according to your preferred method.
2. Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
3. Add your coffee and pour over with boiled water (95°C).
