Origins
White chocolate with freeze-dried raspberries is the result of a precise process that involves several steps. Before we get to the actual combining of chocolate with raspberries, let us look at the making of white chocolate. It is different from the process used to make traditional dark chocolate.
First, it is necessary to obtain cocoa beans from cocoa trees grown on plantations in Central and South America as well as Africa. These beans are carefully harvested, fermented and dried. That is followed by a roasting process that releases the natural flavors and aromas of the cocoa beans. The roasted beans are then ground to produce a cocoa mass that contains cocoa butter and cocoa.
White chocolate is made from cocoa butter only. It needs to be mixed with milk powder and sugar. The exact amount is carefully regulated to achieve the desired sweet and creamy taste of white chocolate. After mixing, there is a conching process in which the chocolate mixture is heated and stirred for several hours. The aim is to achieve a smooth and delicate chocolate consistency while helping to remove bitterness and develop a rich aroma.
And now for the actual combination of white chocolate with freeze-dried raspberries. Freeze-drying is a process used to preserve the sensory properties of the fruit as well as the vitamins and minerals. During freeze-drying, the water in the fruit goes directly from a liquid state to a gaseous state by sublimation. Then, all you have to do is add the freeze-dried raspberries to white chocolate, and the perfect combination of sweet, sour and smooth is born.
