Origins
Most of our flavored coffees are based on coffee from Puno Norte, Peru. Why? Because it is a high-altitude coffee of exceptional quality. The plantations it comes from are located in the country's distinctly mountainous south. The region's capital, Puno, lies on the shores of the famous Lake Titicaca. All this has a significant influence on the characteristics of the local coffee. The temperature, as well as the composition of the volcanic soil and the humidity, contribute to the final taste of each coffee bean. Of course, we must also acknowledge the work of the farmers and roasters behind it, but one thing at a time. When the red fruits of the coffee trees in Puno Norte ripen, usually between June and November, it is mainly local women who go out to the plantations to pick them.
They carefully select ripe berries, pluck them into large baskets, and take them to the farms for processing. In Peru, coffee is usually washed, meaning the berries are put into barrels of water and sorted. They are then pushed through crushing plates, using more or less sophisticated machines, which remove the top cover and some of the sweet pulp. The workers then place them back in the water barrels and leave them to ferment for several days. During the natural fermentation process, the residual pulp is completely dissolved, and the seeds are released.
These are then dried, either in direct sunlight or in ovens. But they still have a way to go. After drying, the coffee is left to mature in jute bags for several weeks and stored in a dark, cool place. Then it can finally go to the market and into the world. In this case, to the roaster who gives it the attention it deserves. In a few dozen minutes, he will fine-tune the temperature needed to brew the coffee to the ideal taste and the most wonderful aroma. However, in the case of Cinnamon-Plum coffee, he sprays it with a carrier oil with a natural aroma before roasting begins. It gives the coffee a new flavor dimension without losing its original taste profile. The natural flavoring contains only aromatic substances derived from plant-derived materials and is, therefore, completely safe for health.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
